Your Stories Q&A: Here’s what’s moving into the closed Kirby’s in Fayetteville

FAYETTEVILLE, N.Y. (WSYR-TV) – You ask, we answer!

We now know what’s next for the closed Kirby’s in Fayetteville.

The owners of Apizza Regionale and one of the men behind Dinosaur-Bar-B-Que are planning to open a Roman-inspired café.

Owner and operator, Paul Messina said, that during the day the café will operate a specialty market with Italian provisions.

He said they’ll serve Roman-style pizza, paninis, homemade pastries, and bread. He said there will be an onsite bakery.

Messina said in the evening, guests can expect a full-service Roman trattoria, with a wine and cocktail menu.

A name has yet to be finalized, but Messina said they like the idea of it being called, Apizza Alimentari.

Messina said that the pizza served at the new Fayetteville restaurant, won’t be the same Neapolitan style as Apizza Regionale in Syracuse. He said they are looking to buy an imported electric oven from Italy to make the pizza in Fayetteville.

Besides, Messina, John Stage of Dinosaur-Bar-B-Que, and Amy Chrisogonou are part of this new venture.

“It will be a neighborhood keystone of the best Italian food. It will be part café, part market, gelato, pizzeria and trattoria all in one,” Messina said.

Messina added that they are looking forward to joining the “excellent culinary scene” in Fayetteville and Manlius.

As for when it will open, Messina said they hope to welcome guests in about a year. Right now, the entire plaza is undergoing renovations.
