Restaurant health inspections: Dec. 31-Jan. 6

SYRACUSE, N.Y. (WSYR-TV) — The Onondaga County Health Department released its inspection reports for restaurants checked from Dec. 31 through Jan. 6.

Two food services failed their inspections:

Failures:

  • Asian Garden – 7873 Oswego Road, Liverpool
  • Subway – 501 Seventh North Street, Liverpool

Asian Garden

Asian Garden had 16 violations, three in critical condition.

Critical violation: Improper cooling and refrigerated storage of potentially hazardous foods.

The inspector found two sheet trays of cooked pork egg rolls on a sheet tray rack at 60 degrees Fahrenheit.

Employees told the inspector that the food was being cooled after it was cooked. However, it was put on the trays after cooking three to three and a half hours before the inspector came.

The rack was also located in the rear of the restaurant where the air is cooler at 51 degrees Fahrenheit. This was corrected and the food was put into the walk-in cooler to finish the cooling process.

Critical violation: Improper hot holding of potentially hazardous foods

The inspector found one small food bowl of fried rice in the electric rice pot hot holding at 130 degrees Fahrenheit.

Employees told the food inspector that the food was put into the hot holding following cooking which was 30 to 45 minutes ago. This was corrected and the food was reheated to 165 degrees Fahrenheit.

Critical violation: Inadequate cooking and reheating of potentially hazardous foods

The inspector found approximately five pounds of cooked white rice in the electric rice hot holding unit at 77 degrees Fahrenheit.

Employees told the inspector that the rice was cold under refrigeration when it was put into the unit and is being reheated for use. It was determined that the white rice had been in the hot holding unit for reheating for three to three and a half hours.

This was corrected and the food was discarded. According to the inspector, the hot holding units are designed to keep food hot and are not for reheating.

Food not protected in general: The inspector noted that bags of potato starch, corn starch and sugar were open and not stored closed when not in use. There was also cooked chicken found stored in a cardboard box. Both of these were corrected.

This violation was found two times.

Food not protected in general: The inspector noted that the cleaver used for processing food was stored in a seam between counters, which is not a sanitary surface.

Poor sanitary design, construction, and installation of equipment and utensils: The inspector noted that the walk-in cooler wire racks were rusty and some lower shelving throughout the restaurant was found lined with cardboard. Both these surfaces are not smooth and easily cleanable.

This violation was found two times.

Improper cleaning, washing, and sanitizing of equipment and utensils: The inspector noted that the meat slicer blade guard wasn’t clean and had dried food residue. The food thermometer also wasn’t clean and had dried food residue.

Improper cleaning, washing, and sanitizing of equipment and utensils: The inspector noted the white upper rim of the rice cooker wasn’t clean and had food soil on it. All the upper shelving above the cookline holding single service items wasn’t clean and some lower shelving was as well. The interior bottom shelf of the prep cooler also wasn’t clean and had food soil on it.

This violation was found four times.

Improper construction and maintenance of physical facilities: The inspector noted that all the floor areas weren’t clean including under most equipment and floor edges along the walls.

Subway

Subway had four violations, two in critical condition.

Critical violation: Improper cooling and refrigerated storage of potentially hazardous foods.

The inspector noted that the self-service display cooler at the service line had an ambient temperature of 59 degrees Fahrenheit. According to the inspector, it was undetermined how long the cooler had been out of temperature, which is supposed to be 45 degrees or below.

The following products were found inside at these temperatures:

  • Six (7oz) bottles of 2% milk at 59 degrees Fahrenheit

This was corrected and the cooler was taken out of service for refrigeration. The milk was also voluntarily discarded as products that don’t require refrigeration but are purchased cold are moved to another cooler.

Critical violation: Improper hot holding of potentially hazardous foods

The inspector found one medium food pan containing meatballs and sauce in the hot holding unit at 125 to 136 degrees Fahrenheit.

Management told the inspector that the food had been out of temperature for no more than one hour. However, meatballs are a commercially precooked product and according to management, had been reheated from cold to 165 degrees Fahrenheit minimum before being put into the hot holding.

This was corrected and the meatballs and sauce were reheated to 165 degrees Fahrenheit minimum and returned to an adjusted hot hold.

Improper cleaning, washing, and sanitizing of equipment and utensils: The inspector noted that the beverage dispenser of the ice slide had some mildew on it. This was corrected and cleaned.

Improper cleaning, washing, and sanitizing of equipment and utensils: The inspector noted that the bottom shelf of the cabinet at the self-serve beverage station wasn’t clean.

Many locations passed their inspections between Dec. 31 through Jan. 6.
